  7. Use 4 shallots chopped fine

Instructions to make Chilli Mushroom Soup:
  1. For the Chilli paste - In a wok heat oil and add garlic, whole red chillies, shallots and galangal. Fry for 4-5 mins and cool, make a paste and set aside.
  2. For the Soup - Heat oil in a wok and add mushrooms and fry for 1 min. Set aside.
  3. In the same wok add vegetable stock and bring it to boil. Add salt, julienne ginger and sautéed mushrooms. Stir in chilli paste and simmer for 5 mins.
  4. Sprinkle fresh coriander leaves and spring onion greens and serve hot.
