- You need 1 kg lamb shoulder or leg
- Use 1 kg small potatoes
- Take 6 garlic cloves, sliced
- Provide 80 ml olive oil
- Prepare Juice of 1 to t and 1/2 lemon
- Provide 2 Bay leaves
- Provide to taste Ground black pepper
- Provide 200 ml white wine
- Prepare 1 tbsp pimento paste
- Provide to taste Salt
- Take 1 tsp annatto powder (optional)
- Get 3 small or medium onions, cut into quarters

- In a small bowl mix well the annatto powder, pimento paste, salt, lemon juice, garlic and bay leaves.
